Crepe Suzettes

Serving Size: Serves 4-6
Directions:
To make sauce:
1 Blend orange juice, lemon juice and rind for 2 minutes in electric blender.
2 Add butter and sugar, blend for another 2 minutes.
Yields 1 ½ cups of sauce.
To make crepes:
1 Place milk and orange rind in the electric blender.
2 Blend until rind looks grated. Add remaining ingredients and blend until smooth - about 30 seconds.
3 Fry the pancakes thin, using ¼ cup batter for each pancake.Cook until lightly browned on one side, turn and cook other side until also lightly browned.
4 As each pancake is done, spread with orange butter sauce and roll up.
